Baked Mozzarella Chicken Rolls

I am happy to tell you about roasted mozzarella chicken rolls. This is indeed one of my favorite inventions this year. Let me tell you a list of ingredients, including spinach, basil, ricotta, soft mozzarella, grated parmesan cheese, soft chicken breast, crispy crust, and Arabica-flavored sauce, how could this dish be wrong? The answer is simple … no! Not only does it taste, but it’s also actually low in calories – that is, if I can stop myself from sitting and eating the whole pot at the same time, I admit this is a challenge. This little devil is very delicious!

Ingredients :

  • 2 lbs. boneless skinless chicken breasts (8 4-ounce pieces)
  • 1 clove minced garlic and olive oil for sauteeing
  • 3 ounces fresh mozzarella cheese, thinly sliced
  • 5 ounces fresh baby spinach
  • 1/3 cup beaten egg whites (I used something similar to Egg Beaters)
  • 6 tablespoons grated Parmesan cheese, divided
  • 1/2 cup part-skim ricotta cheese
  • 1 cup whole wheat Italian style bread crumbs
  • fresh basil for topping
  • 1 cup marinara sauce

Instructions :

  1. Preparing the chicken: cut the chicken into 8 parts, cut into thin slices (quickly cooked), and expand to the surface (for more content). Place the breadcrumbs in a shallow bowl containing two tablespoons of Parmesan and leave for some time.
  2. Prepare the contents: cut the spinach, then fry with garlic, then drop with olive oil for 2-3 minutes, until the olive oil withers. Mix fried spinach with ricotta cheese, parmesan cheese and 2-3 tablespoons of egg white. Place the remaining egg whites in another shallow bowl and set aside.
  3. Add chicken: coat the bottom of a large baking pan and preheat the oven to 450 degrees. Place a piece of chicken on a flat surface. Place a spoonful of spinach and cheese in the middle and roll the chicken until the ends meet to form a “seam.” Dip the rolled chicken completely into egg white and place it on breadcrumbs. Place it on a baking sheet with the seams facing down. Repeat the remaining 7 chickens. Bake for 25 minutes.
  4. Last touch: After 25 minutes, the chicken (white on the inside) must be cooked and browned from above. Sprinkle chicken with spices and fresh mozzarella cheese. Bake for 3-5 minutes, or until the cheese has melted.
    Sprinkle with fresh basil.

Notes

Don’t try to squeeze all the parts very tightly, because if you touch them on the side, they won’t be fragile. There is a little space between each part, which makes perfect bread, chocolate and crispy crumbs.
